BrightSpirit Soup I came up with this fast simple easy and most DELICIOUS soup when I was farming and surrounded by mountains of organic produce from my farm. I get repeated requests for this recipe so here ya go! 1/4 cup olive oil 1/2 bulb of garlic 1 onion, chopped 1/4 cup ginger 1/2 cup red lentils (optional) 1/2 cup quinoa (optional) 1 teaspoon dry Thyme 1 bay leaf 1/2 teaspoon dry Oregano 1/2 cup parsley, chopped 1 tablespoon real salt 1 pablano pepper, chopped 1 cup carrots, cut in chunks 1 cup celery, chopped 1 cup tomato, chopped up 1 cup potatoes, cubed 4 stalks of chard, cut and chop including stem fresh ground pepper and more salt to taste On medium heat in a thick bottomed soup pot pour in the olive oil, garlic, onion ginger, salt, Thyme, bay leaf and oregano. Sauté for five minutes stirring frequently. Add enough water to cover the sautéed veggies and bring to a rapid boil. Add, lentils, quinoa, and rest of the vegetables and cover with water only to the top of the vegetables and bring to a rapid boil. Then add more water to about an inch above the vegetable and turn down to a gentle boil and cook for about 20 minutes. Add salt and pepper to taste and enjoy!
