Ginger Sweet Potatoes or Yams Produce needed: Sweet Potatoes or yams, ginger, garlic   4 medium sweet potatoes or yams 1/2 cup milk 1 (1 inch piece) fresh ginger, peeled and grated 1 clove garlic, minced 1/2 tsp. sea salt 1/4 tsp. fresh ground pepper 1 TBS. ghee or butter   Cut sweet potatoes or yams into medium pieces and boil until tender. (see alternative below)  When tender, cool just enough to peel skins off (they will slip off easily). In large saucepan, heat milk, ginger, garlic, ghee or butter, salt and pepper until warm.  Add warm potatoes and beat with mixer until blended and smooth.   Alternate:  Bake potatoes or yams in preheated oven of 400 degrees for 45 minutes.  Pierce skin in several places before baking.  When done, scoop out insides and proceed as above.  This recipe provided courtesy of Fresh Abundance! www.freshabundance.com 509-533-2724
