Member Ellicia) I learned to make this recipe at a multi- cultural resteraunt I worked at about 12 years ago. They used it as a standard side dish to go with pasta, rice, tofu, meat, and curry dishes. Suprisingly it went very well with almost everything. I have used it over the years to add variety to the usual raw carrot side, and for a special side to have when we’re having company over. It is also good to reheat and have over rice for lunch if you end up with leftovers. (even my very picky kids like this one!) 1 Bunch Carrots, sliced at a diagnal angle medium-thin 1 Tblspn olive oil 1 Tblspn fresh minced garlic 1 Tblspn honey 1 Tblspn chopped parsley or basil Preheat the over to 425. Mix everything together, except the honey, in a baking dish. Drizzle the honey over the top of the carrot blend. Cover and bake for about 15-20 minutes until carrots are cooked, but still slightly crunchy with the flavor well absorbed. Stir well and, if desired, add salt and pepper to taste. This is a good recipe to play around with. I have added lemon juice, lemon thyme, rosemary, maple syrup instead of honey and onions as well as garlic when I needed to use a small amount up.
