This quick and easy stir fry is a nice summer dinner when you don't want to spend much time in your kitchen. 1 cup thinly sliced broccoli spears 2 cups chopped bok choy leaf and stem Half cup carrots cut into match sticks 1 onion slivered tablespoon of shredded ginger Block of tofu (We prefer the Garlic & Herb flavor) Oil for sautéing Tamari Over medium heat in a heavy pan like a nice cast iron skillet put a few tablespoons of oil and sauté ginger & onion for two minutes. Add the rest of the vegetables & tofu then splash with tamari. Cover and let cook till tender but a bit crisp turning over with a flat spatula two or three times to cook evenly.
