Rosemary Red Potatoes This dish is elegant enough for a dinner party but easy enough for any evening dinner addition. 1 pound medium Red Potatoes 2 Table spoons fresh Rosemary (or thyme, tarragon, or savory) Olive oil Boil the Red Potatoes till you can insert a fork but the potatoes are still firm. Place the potatoes in cold water to pull the heat out. Cut the potatoes in chunks. Coat a cast iron skillet in olive oil. Over medium heat sauté potatoes for five minutes turning often then add Rosemary and cook 2 more minutes stirring often.
