Mesculin Salad W/ Tarragon Vinaigrette

Ingredients 

3 qt mixed mesculin greens
3 tb white wine vinegar
2 tb tarragon leaves; minced
1 tb balsamic vinegar
2 ts dijon mustard
2 ts honey *or* 1 tb orange marmalade
1/4 ts pepper
1/3 c  olive or walnut oil

Wash greens and spin or pat dry.

Chill. 
Whisk vinegars, tarragon, mustard, honey and pepper in a small bowl. 
Slowly whisk in the oil.

Toss with greens just before serving.
